Origin Story & Evolution
Kawashiri Cutlery in Kumamoto Prefecture dates back to the Muromachi period when military bladesmiths settled along the Midori River. In the Edo period, under the patronage of the Hosokawa clan, Kawashiri flourished as a primary manufacturing hub. Blacksmiths here pioneered extremely robust, double-bevel kitchen knives and heavy agricultural/forestry tools (such as axes, sickles, and machetes) designed to clear Kyushu's dense mountain foliage.
